I Found Out What My Cutting Board Was Shedding Into Dinner

A 2023 peer-reviewed study put a number on how much plastic comes off a chopping board while you use it. I read the number twice, then went and looked at my own board.

Mine looked like the one in front. Four years of daily use, and I had never once thought about where the grooves went.

My cutting board was a hand-me-down. White plastic, dishwasher safe, the kind that comes in a three-pack and never gets a second thought. It had been through maybe a thousand dinners. The surface was covered in fine grooves you could catch a fingernail on, and a few of them had gone permanently gray.

I always assumed the grooves were cosmetic. Scratches. The board getting a little ugly with age.

Here is what I had not thought through: a groove is a subtraction. That material did not dissolve. It left the board.

So where did it go?

Someone actually measured it

In 2023, a research team at North Dakota State University published a study in Environmental Science & Technology, a peer-reviewed journal from the American Chemical Society. The title reads like a rhetorical question: Cutting Boards: An Overlooked Source of Microplastics in Human Food?

The setup was straightforward. Chop on plastic boards under controlled, realistic conditions. Collect what comes off. Count it, weigh it, identify it. Then extrapolate to what an ordinary household generates in a year.

Fifty grams is roughly the weight of ten quarters. That is not a trace amount, and it is not a lab-only edge case. It is the estimate for a board doing ordinary work in an ordinary kitchen.

The particle counts are what stayed with me. The researchers estimated a person could be exposed to 14.5 to 71.9 million polyethylene microplastic particles a year from chopping boards, and around 79.4 million from polypropylene. Most measured under 100 micrometers, far too small to see, taste or feel.

They were not going anywhere except into the food.

The grooves are not wear. They are the board leaving, one meal at a time.

What the study did not say

This is where I want to be careful, because most of what gets written about microplastics online skips this part entirely.

The same paper ran a preliminary toxicity test on the polyethylene particles it collected, using mouse fibroblast cells. Over 72 hours, it did not find adverse effects on cell viability.

That is a real result and it belongs in the conversation. The study did not demonstrate that your cutting board is making you sick. It demonstrated that plastic boards are a substantial and previously overlooked source of microplastics in food, and it said the finding requires careful attention.

Which is how I would put it. I am not going to tell you your board is causing disease, because nobody has shown that. What I will tell you is that I no longer wanted to add fifty grams a year of something to my family's food that I could not identify, could not taste, and had never agreed to.

How plastic became the safe option in the first place

Here is the irony that made me feel a little conned.

Plastic boards won American kitchens on a hygiene argument. Non-porous, they said. Dishwasher safe. Sanitizable. Wood was the suspect material: porous, absorbent, impossible to truly clean. Commercial kitchens standardized on plastic, home cooks followed, and the color-coded plastic board became the mark of someone who took food safety seriously.

That argument was about bacteria, and it was a reasonable argument to have in 1990.

The problem is that the microplastic question was not on the table yet. We optimized hard for one variable and never went back to check the others. The material adopted specifically because it was the responsible choice turns out to be the one shedding tens of millions of particles into dinner.

Expensive up front. Firmer than wood, so it feels different under the knife. Most people adjust in a week, some never like it. And you will not find one in a supermarket aisle.

I ruled out glass immediately, because I am not sacrificing my knives to solve this. Wood was tempting and I still keep one for bread. But I did not want a porous surface for raw chicken, and I was not going to start oiling a board on a schedule.

That left titanium, which I had never heard of as a cutting surface until I started looking.

I went with a titanium board from a company called Katuchef. It kept surfacing when I searched for non-porous surfaces that were not glass, and it was the only one I found that was a solid titanium cutting surface rather than a coating over something else.

Three months of daily use in, here is my honest read.

What I like. There is nothing to degrade. No grooves forming, no gray staining, no smell. I cut raw chicken on it, wash it, cut fruit on it twenty minutes later and do not think about it. Onion and garlic do not linger the way they always did in wood. It is the first cutting board I have owned that I expect to still have in ten years.

What took adjusting. The sound. Metal under a blade is a different noise than wood and it startled me for the first week. The feel is firmer, so you get less give than a wood board, and if you chop fast and hard you will notice it. It also is not cheap, and I want to be straight about that: it is a one-time cost several times what a plastic three-pack runs. The argument for it is that it is the last one you buy.

If you cook twice a month, honestly, just replace your plastic board more often and sharpen your knives. If you are in the kitchen most nights, the math looks different.

What Changes Day to Day

The practical differences after three months of use

Nothing to degrade

No grooves forming, so there is no surface breakdown to monitor or replace on a schedule.

Double sided

Raw protein on one face, produce on the other, without a second board on the counter.

No odor carryover

Garlic and onion rinse off completely. Nothing soaks in because there is nowhere for it to go.

Zero upkeep

No mineral oil, no conditioning, no hand-wash rule. It goes in the dishwasher and comes out done.

The part that actually changed my mind

It was not the health angle. The evidence there is genuinely unsettled, and anyone telling you otherwise is selling harder than I am.

It was simpler. I run a household where I read ingredient labels, buy the better olive oil and wash the produce. And the whole time there was a slab of polypropylene going into every single thing I cooked, in quantities measured in grams per year, and it had never once occurred to me to ask.

That is the part I could not leave alone. Not that it is proven dangerous, but that it was invisible, entirely avoidable, and I had never even considered it.

Go look at your board. Run a fingernail across it. If it catches, you now know where that material went.

Does the study prove plastic boards are dangerous?

No, and it does not claim to. The preliminary toxicity testing in that paper found no adverse effect on the viability of mouse fibroblast cells over 72 hours. What the study established is the quantity being released, and it called that a finding requiring careful attention. What you do with the quantity is your call.

Is a wood board good enough?

For the plastic question, yes. Wood sheds no plastic. It brings its own trade-offs: it is porous, so it absorbs liquid from raw meat, it cannot go through the dishwasher, and it needs oiling to avoid cracking. I still keep one for bread. I would not use one for chicken.

Will a metal board ruin my knives?

Glass will. Titanium is a different case, and this was my main objection going in. Three months of daily use and my knives hold their edge on a normal sharpening schedule. It is firmer than wood and you feel that, but it is not the edge-destroying surface that glass or granite is.

Can it go in the dishwasher?

Yes. Non-porous metal, nothing to warp, no finish to strip. That was one of the main reasons I chose it over wood.
