I Found Out What My Cutting Board Was Shedding Into Dinner
A 2023 peer-reviewed study put a number on how much plastic comes off a chopping board while you use it. I read the number twice, then went and looked at my own board.
My cutting board was a hand-me-down. White plastic, dishwasher safe, the kind that comes in a three-pack and never gets a second thought. It had been through maybe a thousand dinners. The surface was covered in fine grooves you could catch a fingernail on, and a few of them had gone permanently gray.
I always assumed the grooves were cosmetic. Scratches. The board getting a little ugly with age.
Here is what I had not thought through: a groove is a subtraction. That material did not dissolve. It left the board.
So where did it go?
Someone actually measured it
In 2023, a research team at North Dakota State University published a study in Environmental Science & Technology, a peer-reviewed journal from the American Chemical Society. The title reads like a rhetorical question: Cutting Boards: An Overlooked Source of Microplastics in Human Food?
The setup was straightforward. Chop on plastic boards under controlled, realistic conditions. Collect what comes off. Count it, weigh it, identify it. Then extrapolate to what an ordinary household generates in a year.
Estimated microplastic exposure per person, per year, from a single polypropylene cutting board. For polyethylene boards the estimated range ran from 7.4 to 50.7 grams, depending on chopping style, knife sharpness and what was being cut.
Fifty grams is roughly the weight of ten quarters. That is not a trace amount, and it is not a lab-only edge case. It is the estimate for a board doing ordinary work in an ordinary kitchen.
The particle counts are what stayed with me. The researchers estimated a person could be exposed to 14.5 to 71.9 million polyethylene microplastic particles a year from chopping boards, and around 79.4 million from polypropylene. Most measured under 100 micrometers, far too small to see, taste or feel.
They were not going anywhere except into the food.
What the study did not say
This is where I want to be careful, because most of what gets written about microplastics online skips this part entirely.
The same paper ran a preliminary toxicity test on the polyethylene particles it collected, using mouse fibroblast cells. Over 72 hours, it did not find adverse effects on cell viability.
That is a real result and it belongs in the conversation. The study did not demonstrate that your cutting board is making you sick. It demonstrated that plastic boards are a substantial and previously overlooked source of microplastics in food, and it said the finding requires careful attention.
Which is how I would put it. I am not going to tell you your board is causing disease, because nobody has shown that. What I will tell you is that I no longer wanted to add fifty grams a year of something to my family's food that I could not identify, could not taste, and had never agreed to.
